Moloka'i coffee, grown on the 460-acre Coffees of Hawai'i estate in the central part of the island, displays distinctive flavor notes that variously suggest dried fruit, herbs, cherry-toned chocolate or sweet pipe tobacco. The intensity and character of these smoky, teasing notes varies from crop year to crop year, but they always distinguish the cup of both the traditional wet-processed Malulani Estate (delicately bright, gently high-toned) and the sun-dried-in-the-fruit Moloka'i Muleskinner - sturdy and low-toned.
